Gluten for Punishment

To make a (REALLY) long story short…

I was diagnosed with Celiacs Disease in the summer of 2016. And that explained a lot. It was discover by a Hematologist after blood work to check an iron deficiency (also a nasty side effect of the celiacs). I immediately began a “gluten free” diet, I say that very sarcastically because I was constantly falling off the wagon, and having cheat snacks or meals or even days. And let’s be real here, I cared nothing about the fear of cross-contamination, if something had gluten in it, it had gluten. If it didn’t have wheat, barley, rye, or triticale on the ingredients list then it was automatically gluten free. Which to my disappointment is not always the case. I ended up giving up on living the gluten free lifestyle with the mindset I’ll eat what I want and if I get sick (which I did) then too bad so sad for me.
But it’s the beginning of a new year, and after years of doing what I want, it’s time to do what I need to do. And no I don’t mean to become a better person, but to finally say bye bye to fresh rolls hot from the kitchen at restaurants, goodbye cheese stuffed crust pizza delivered straight to my door, adios to flour tortilla enchiladas and burritos, and cake, oh my dearest cake, it was great while it lasted but it’s time to step away from the flour and embrace the feeling of not rushing to the bathroom every time I eat.
It is my goal to feel better, and two things will accomplish that. One, put the gluten away for good, it is not worth it. And two, eat good, healthy for me food. That was my biggest problem with the gluten free diet in the first place. Most gluten free grocery store items, are just plain bad. Not all of them, I have found some that are quite enjoyable. But let’s not forget the pretty penny you have to fork out to stock your cabinets with the gluten free food. It’ll break the bank and your heart, spending that kind of money on food that you don’t want to eat in the first place.
So I’m on the lookout for gluten free, simple, cost effective meals and recipes that are both good to my tummy and make me feel like a Michelin star chef, even though I’m pretty sure I screwed up boiling water yesterday afternoon. It will be a learning experience, but if I accidentally burn the house down in the process I think we have good insurance.
